“Cream of” Soup Base

I can’t be the only one that is wary of the gloopy cream of soup that plops out of the Campbell’s soup can. I think my opinion worsened when I read a label and learned that it has ingredients like corn, canola and/or soybean oils and modified milk ingredients. Modified milk ingredients is an umbrella term for milk products which have an altered chemical state from that which is naturally found in milk.

So what can we do about it? We can’t can our own ‘cream of’ soups (freezing is an option, but I don't have the freezer space). I personally like to keep a well stocked dry pantry, so I can easily go in my pantry and make a large batch of “cream of anything” soup base. Even if you have to pick up a few of the ingredients, this mix is a life saver to have on hand.

You can easily add your favorite dried flavors to the mix. Like mushrooms, chives/onions, etc. Or just add the fresh version to your mixed soup.

I kept a scoop from my protein powder, which just happens to be a 1/3 cup scoop. Just mix 1 scoop with with one cup of water and voila! I can of soup!

I usually multiply this recipe by 3 or 4 because i use it so often. Just be sure to mix it well before putting into your jar. Click on the pic below for a printable version
